This fades out at the crucial points - so you can't actually see what's going on. Sorry, but I'm none the wiser after watching this videa and trying to replicate the technique.

Handy info, however, I was always under the impression that wing collars were reserved for white tie events only and that a turn-down collar is the correct type to be worn with black tie. Wing collar and black tie is regarded by more traditional types as a sartorial faux pas.
With regards to tradition surrounding evening shirts, the Turndown Collar shirt is a modern interpretation of the Wing Collar Shirt which is the original, classic shirt worn at Black Tie events. However, White Tie events require a full dress shirt with folded wings. Contemporary Black Tie requires either a Wing Collar Shirt or a Turndown Collar Shirt, either are suitable.
